Use freshly picked strawberries and whip up this delicious banana split ice cream cupcakes recipe.

Fresh strawberries always inspire me to create new desserts. The deep cupcake pan from Wilton is a favorite because it makes giant desserts that are so much fun. This recipe fabulous because the frozen cupcakes can be prepared ahead of time and ready to serve with toppings straight from the freezer.

Banana Split Ice Cream Cupcakes Recipe

Ingredients for Ice Cream Cupcakes

  • Fresh Strawberries
  • Bananas
  • Whipped Cream
  • Sprinkles
  • Chocolate Candy Melts or Hot Fudge
  • Vanilla Ice Cream
  • Pound Cake (Gluten Free if Desired)
  • KING-Size Muffin pan from Wilton
  • Cupcake Liners (The ones I used were from Hobby Lobby)
  • Maraschino Cherries

Directions

The best thing about this recipe is that is easily adaptable. The fresh strawberries are so good but you could also use another kind of berry if preferred. While vanilla ice cream is the go-to around here, some people prefer chocolate. Once you have made these a few times, it is fun to experiment with different fruit, ice creams, cookies and cakes. The ice cream cupcakes recipe is really fun to play around with.

Steps for Cupcakes

Start by blending thawed ice cream to get it to a consistency that can be stirred.

Next, chop the fresh strawberries and add them to the ice cream then stir them in.

Then, put liners in the cupcake pan and add pieces of pound cake (or cookies) in each one.

Pour the ice cream mixture with the strawberries over the cake, filling the liners ALMOST the the tops. Freeze for at least three hours before serving.

Serving Banana Split Ice Cream Cupcakes

Once the cupcakes come out of the freezer, they are ready to serve. If for some reason yours are hard to get out of the pan, place it in a shallow sink of HOT water for a minute to loosen the ice cream cupcakes.

Serve in a bowl with either melted chocolate candy or hot fudge on top – over a bed of sliced bananas. Add whipped cream, sprinkles and of course – a cherry on top.

  17. Sounds delicious! So much can be done ahead of the party which is always helpful. I just saw a tip on putting scoops of ice cream in cupcake liners, placing in a cupcake baking pan, and freezing. Then, at party time, it’s easy to transfer the scoops to cones.
