Whip up a batch of Grinch Truffles for a holiday movie night or the next Christmas cookie exchange.
These GLUTEN FREE Grinch-inspired cheesecake bite truffle treats will have your heart growing three sizes with every delicious bite. Create a holiday season that is a little sweeter with these yummy and easy to make Grinch Cookie Cheesecake Bites. These are perfect to make ahead of time for a fun themed movie night with the family and friends.
Ingredients
These are the ingredients needed for this recipe. Note that while I am sharing it being made with Gluten Free Goodie Girl Birthday Cake cookies, these can also be made with Golden Double Stuf Oreo cookies.
- 25 Goodie Girl Birthday Cake Cookies OR 20 Golden Double Stuffed Oreos
- 4 oz cream cheese, softened
- 10 oz dark green candy melts
- Large red sprinkles, to decorate
You will also need a food processor, parchment paper and a microwave or double boiler to melt the candy coating.
Parchment Paper – This is the BEST way to line baking pans and dishes. It is great for pouring melted candy too.
Directions To Make Grinch Truffles wih Gluten Free Cookies
Line your work surface with parchment and place on a plate or cutting board that will fit in the fridge/freezer.
Using a food processor, grind the Golden Oreos into a fine crumb. Place the crumbs in a medium bowl and combine with the softened cream cheese.
Mix until combined.
Scoop out a heaping tablespoon’s worth of the dough and roll into a round ball. Place on the parchment and repeat until all the dough is used up.
Chill the rolled dough in the fridge/freezer for about 20 minutes.
Melt the green candy melts in a microwave safe bowl, heating in 30 second increments and stirring well between each interval.
Using a spoon, dip each chilled dough ball in the green candy melts and coat. Scoop out the ball and tap off the excess candy melt on the side of the bowl. Transfer the truffle ball to the parchment again and use the tip of the spoon to cover up any areas that appear thin or where the spoon left an indent. Repeat with the remaining dough balls.
Once all the truffles have been dipped, transfer the remaining candy melt to a piping bag. Cut off a small hole in the end and quickly drizzle over the top of the truffles.
Place a single large red heart sprinkle on top of each truffle.
These are simply perfect in every way. They are so adorable on the outside and scrumptious through the middles.

Storage:
Truffles can be stored in an airtight container in the fridge for up to a week
or frozen for 3 months.
