Creamy chicken pot pie on an cool autumn night is such a treat, unless your diet is of the gluten free nature. Thank goodness for potatoes, Idaho or sweet! Instead of a crust filled with things that might cause uncomfortable reactions (gluten), potatoes are a great alternative to holding that creamy mix of veggies and chicken.
The great thing is that you can use whatever fresh steamed veggies your family likes and cook your chicken whatever way suits your fancy (cubed, shredded, baked, grilled). To create the creamy yumminess that holds it all together, I used cream of chicken soup but you can use whatever recipe you like.
