Gluten Free Strawberry Blondie Bar Recipe
These yummy strawberry blondies are packed with fresh strawberries and a tiny kick of lemon. They are simple and quick to throw together using ingredients that you probably already have in the pantry. It is like a little strawberry patch in every scrumptious bite. For some places the peak of strawberry season is in the spring and other places in the summertime. Regardless of when your season hits, you should try this gluten free strawberry blondie bar recipe!
Ingredients Needed (And Supplies)
- Parchment Paper
- 9 inch Square Baking Dish
- 1 cup unsalted butter, softened
- 1¾ cups light brown sugar, packed
- 2 large eggs (room temperature)
- 2 tablespoons fresh squeezed lemon juice
- 1 teaspoon lemon zest
- 2½ cups Gluten Free flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1-2 cups fresh strawberries, diced and patted dry
Directions for Gluten Free Strawberry Blondie Bars
Start by prepping your baking dish and preheating your oven. While greasing the dish and lining it with flour is always an option – I highly recommend parchment paper lining because you can lift the bars right out when they are cooled from the baking.
Next, combine the butter and brown sugar with a mixer. Add the eggs and mix them in.
Dice your strawberries (after coring them of course) into small pieces. Pat them with a paper towel to remove excess moisture.
Juice a lemon to get about 2 or 3 tablespoons and then zest the outside. This is my favorite lemon squeezer because you can store the extra juice in it.
Pour the juice over the strawberries in a separate bowl and add the zest. Let this sit for about 5 minutes. If you want your strawberry blondie bar to be zestier, add more zest here.
In a separate, medium-sized bowl, whisk together the flour, baking powder, and salt. Gradually stir the flour mixture into the butter and egg mixture until completely combined. Drain strawberries then fold in gently.
Spread the batter evenly into the prepared pan and gently press it a bit. Bake 40 minutes, or until the edges are turning golden brown.
Remove from oven and allow blondies to cool before adding optional glaze, frosting or fresh strawberries.
Adding Glaze
If you want to add an extra layer of sugary goodness to the strawberry blondie bar, add a glaze. This can be a basic royal frosting. Fresh strawberries are a great addition too.
