I made a green bean pie. Seriously, I did. I made it because I didn’t have time to go to the grocery store before I had to have Senior Christmas Lunch on the table and had to use what ingredients I had. It was awesome. The kids ate it. I simply must share.
I used a frozen pie crust and poured a can of French style green beans (drained) in it. Then I mixed together 4 ounces of cream cheese with 1/2 cup of mayonnaise and dabbled it on the beans. I added 1 cup of shredded cheddar cheese then topped it with a canister (2.8 oz) of French’s French fried onions.
I mean I know that teenage boys will eat about anything but they ate it ALL!
I love these kids. I love that they come home for lunch and that they let me be such a fun part of their life at such an important time. This is the hashtag that they left for me on the butcher paper tablecloth. It makes me laugh at myself and know that I must be up to something good.
What a great day. What a great recipe. What a great life (or I guess I mean lyfe)!
