These St. Patrick’s Day Peanut Butter Chocolate Cookies are better than reese’s peanut butter cups and so much cuter too!
BONUS – They are gluten free!
In just a few easy steps, whip up a batch of these delicious homemade reese’s peanut butter cup type cookies then decorate them to be festive and fun. They are perfect for serving at parties, on game night and adding to lunch boxes.
Ingredients (and Supplies)
- 1 C Creamy Peanut Butter
- 6 TBSP Butter, Softenen – NOT MELTED
- 2 1/2 C Powdered Sugar
- 1 TSP Vanilla (or Almond) Extract
- 1/4 TSP Salt
- Melting Chocolate (Can Also Use Chocolate Chips)
- Green Sprinkles
You will also need a hand mixer, sifter, parchment paper and a small cookie cutter. I found and used this darling shamrock one to create these cute sweet treats.
Directions
Start by melting butter in a large bowl. This works great in the microwave. SIFT in all of the powdered sugar.
Next, add the peanut butter, vanilla and salt. Mix with hand mixer until the consistency is that of cookie dough.
Roll out the mixture and use cookie cutters to cut out the shapes. Place on parchment paper then put in the freezer to chill before next steps. The more frozen the shapes are, the easier they are to dip in the chocolate.
Remove from freezer and dip in melted chocolate then immediately add a few green sprinkles.
Once the chocolate hardens, dip the other side in and place back on the parchment paper. Chill before serving for the tastiest treats.
