This recipe is one from my mom. It is a tried-and-true favorite in our family and so easy to make. We serve in with, well with just about anything. To make tortilla chip corn pudding, you will need the following ingredients:
- 2 cans of drained corn or fresh corn removed from cob
- 2 TBS White Flour
- 3 TBS Sugar
- 1 3/4 Cups Milk
- Pinch of Salt
- 4 TBS Melted Butter
- 4 Beaten Eggs
- Tortilla Chips
Mix all ingredients together and bake in a buttered casserole dish uncovered for 45-50 minutes until there is no goo in the middle. After taking out of oven, stir and let sit for 5 minutes.
Serve individual plates per person over a bed of corn tortilla chips. Serve right away before for the chips gets soggy.
