Use that extra ripe fruit to make these delicious banana cake cookies.
This cookie is a fantastic way to use those really ripe bananas. Did you know that you mash them and freeze them then use them whenever you need them. Never throw those bananas away again. This recipe is on a card from my mom’s recipe box. It was a favorite growing up. Seeing her GOOD in the handwriting I miss dearly brings my heart such joy.
Ingredients for Banana Cake Cookies
Cookies –
- 2-3 RIPE bananas
- 3/4 C Shortening or Butter
- 3/4 C Granulated Sugar
- 1 Egg
- 1/2 tsp Vanilla OR Almond Extract
- 1/4 tsp Salt
- 1 tsp Baking Soda
- 2 C SIFTED Flour
Frosting:
- 6 tbsp Brown Sugar
- 4 tbsp Butter
- 4 tbsp Condensed Milk
- Powdered Sugar
- 1/2 tsp Vanilla Extract
Directions to Make Banana Cake Cookies
Preheat oven to 350 degrees and line cookies sheets with parchment paper.
Parchment Paper – This is the BEST way to line baking pans and dishes. It is great for pouring melted candy too.
COOKIES
Cream shortening then add sugar and blend. Add egg, vanilla and banana then blend again. Sift together flour, salt and soda. Add to bowl and blend into dough.
Place by large spoonful onto a cookie sheet.
Bake for 8 minutes at 350 degrees until only the edges brown. When removed from the oven, press gently into each cookie to create a place for the frosting to settle.
FROSTING
Place sugar, butter and milk into a pan a bring to a boil, stirring consistently. Remove from heat and add powdered sugar to make it runny but spreadable (about 1/2 cup). Stir in vanilla for extra flavor if desired. Frost cookies while they are still warm.
They are delicious to eat warm but also chilled. Keep them in an airtight container and eat within 3 days.
