Individual Mini Egg Casseroles in a Muffin Pan

These individual mini egg casseroles are easy to make and create great little breakfast treats.  You can add whatever extras you like to make them yummy which makes them awesomely individualized.  I love these for taking to the school on the mornings that PTA serves breakfast to the staff.

The main ingredient is of course, eggs.  You will need one egg for each mini muffin slot in the pan, so for me that was 12.  The eggs get beaten with 1 TBSP of milk for each 6 mini muffins, then you add your ingredients.  I added shredded cheese, salt and pepper then poured them into the GREASED pan.

I added little pieces of ham next – a few per slot.  They sink to the bottom but that is okay.  Next time the request here is to add bacon.  Bake them for 20 minutes or until the egg is cooked through in the middles at 350 degrees.  When they come out, they should look like this.  Let them cool for 5 minutes and then they will pop right out of the pan.  They are excellent served with fresh fruit!
