This simple chocolate recipe makes the perfect copycat cosmic brownie delight.

The classic Little Debbie Cosmic Brownie is an super extra chewy brownie delight with a simple ganache on top with those iconic chocolate morsel candies.

When my boys were growing up, Cosmic Brownies were a favorite in the special treat jar. They would eat the candies off of the top first and then the brownie. For super special treats, we sometimes cut them up into small pieces and served them over ice cream.

Ingredients for Copycat Cosmic Brownies

The ingredients for this recipe are pretty straight forward. Be sure to use gluten free flour for this one to get the right texture.

Ingredients for the Copycat Cosmic Brownies

  • ⅓ cocoa powder
  • ½ c gluten free flour
  • ¾ c sugar
  • ¼ t salt
  • ¼ t baking powder
  • 2 eggs
  • ½ c oil
  • 1 t vanilla

Ingredients for Cosmic Brownie Ganache Topping

Directions to Make Cosmic Brownies

Preheat the oven to 350 degrees.  Line an 8×8 square pan with parchment to cover the bottom and sides.  Set aside.

Parchment Paper – This is the BEST way to line baking pans and dishes. It is great for pouring melted candy too.

In a medium bowl, combine the flour, cocoa powder, salt, baking powder and sugar. 

Whisk gently to combine all ingredients before moving forward. 

In another medium bowl, combine the eggs, oil and vanilla.  Whisk to combine. 

Add the liquid mixture to the dry and stir just until the dry ingredients are incorporated. 

Pour the batter into the prepared pan.

Bake in the preheated oven for about 25 minutes or until the edges are set and the center is no longer glossy.  Allow to cool completely before decorating.

How to Make Ganache for Cosmic Brownies

In a medium bowl, combine the chocolate chips and heavy cream.  Heat in the microwave for one minute.  Stir until smooth.  Pour the ganache over the brownies.  Smooth to the edges.

Immediately sprinkle the morsels over the ganache. Chill the frosted brownies in the fridge for about two hours or until the ganache sets. 

Cut into pieces the size you would like for servings. They can big large or small depending on your desires.

Ingredients

  • For the brownies -
  • ⅓ cocoa powder
  • ½ c gluten free flour
  • ¾ c sugar
  • ¼ t salt
  • ¼ t baking powder
  • 2 eggs
  • ½ c oil
  • 1 t vanilla
  • For the ganache -
  • 1 ½ c semi-sweet chocolate
  • ½ c heavy whipping cream
  • Rainbow morsels, to decorate

Instructions
