Corned Beef and Cabbage in the Crock Pot
Creating meals to celebrate the holidays and the seasons is just so much fun. While I wasn’t a fan of this dish as a child, it has certainly grown on me. I am so proud that it turned out great my first time making it and my family (all but one) loved it. There was enough for me to even have leftovers for lunch the next day! It was my first time and I am so excited to share what I put into my corned beef and cabbage in the crock pot.
I started with fresh veggies, the roast and my favorite pepper. This would be a good time to add any extra spice that you like.
The layering in the crock pot was actually kind of pretty. It often feels like a work of art when I am putting vegetables into the slow cooker with all of their natural colors and textures.
Ta Da! I served it with creamy peppered horseradish. This is one of the best things about corned beef. It always goes great with corned beef and I LOVE it.
Corned Beef and Cabbage in the Crock Pot
Delicious corned beef and cabbage is perfect for St. Patrick's Day.
Ingredients
- Roast of Corned Beef (6 pounds or so)
- 6 Idaho Potatoes Peeled and Chopped into 2 inch squares
- 1 Large Onion Cut in Slices
- 1/2 Cabbage Sliced Up
- Pepper
- 1 Can or Bottle Beer
Instructions
- Put the potatoes and onions (and scallions if desired) into crock pot. Place roast on top then add pepper and seasoning pack if one came with your roast. Pour beer into pot and cook on high for 6-8 hours depending on size of roast.
- Add cabbage and cook for one more hour then serve with horseradish.

Make a note that kids can be super picky so it might be a good idea to have some macaroni and cheese ready too. However, I highly recommend this yummy dinner of Corned Beef and Cabbage in the Crock Pot to celebrate St. Patrick’s Day or any other day for that matter.
