I have so many friends who are gluten free and I am telling you…baking gluten free from scratch is hard stuff.  I have tried and failed and tried and failed again.  The other day in King Soopers I ran across these darling round cartons of baking mix…gluten free.

Truth, I fell in love with the packaging.  They seemed a little expensive but hey, gluten free tends to be.  I bought the chocolate chip cookie mix by Bella Gluten Free and this morning I baked them up!

Seriously, they are amazing.  Zoe had a friend spend the night last night and her mom is gluten free.  PERFECT.  I decided to turn them into a quick gift to give her at pick-up.  YAY…finally a gluten free baking WIN!

Okay, let me just tell you about the cookies.  I used real butter and one brown farm egg.  They are completely moist (a word I only use when referring to food) and delicious.
