We are working on creating healthier eating habits around here these days. Quinoa is highly recommended for all of us and veggies, well they are an of course! Last night I mixed together some ingredients I had on hand and it was delish. We are calling it quinoa and vegetable meatloaf.
This is what I mixed together then molded into a loaf in the dish.
- 1 lb. Ground Turkey
- 2 Cups Cooked Quinoa
- 1 Cup Mixed Frozen Veggies
- 1 tsp salt and 1 tsp pepper
- 1 egg (slightly beaten) to hold it all together
It was bit gooey which is why I chose to use the small dish to keep it together while it cooked. I added a little ketchup to the top to keep the moisture in. I baked it at 375 degrees for 50 minutes. I think it worked! Before slicing, I added fresh tomatoes to the top. Yum!

It was awesome with broccoli, potatoes and fresh fruit.

Gluten Free Meatloaf
Delicious and easy gluten free meal.
Ingredients
- 1 lb. Ground Turkey
- 2 Cups Cooked Quinoa
- 1 Cup Mixed Frozen Veggies
- 1 tsp salt and 1 tsp pepper
- 1 egg (slightly beaten) to hold it all together
- Tomato
Instructions
- Mix all ingredients in large bow.
- Grease a casserole dis.
- Form mied ingredients into a loaf and place in dish.
- Bake for 40 minutes at 350 degrees.
- Serve with fresh chopped tomato.
