This is by far a favorite sweet treat with the combination of peanut butter and chocolate.

Homemade Buckeye Cookies Recipe for No Bake Sweet Treats that are perfect for Christmas cookie exchanges and everyday baking

Not only are these Buckeye cookies completely delicious, they are easy and super fun to make. Kids love helping with this one because the inside part is kind of like peanut butter playdough. Of course the chocolate dipping is always a treat too.

Ingredients (and Supplies)

  • 1 C Creamy Peanut Butter
  • 6 TBSP Butter, Softenen – NOT MELTED
  • 2 1/2 C Powdered Sugar
  • 1 TSP Vanilla (or Almond) Extract
  • 1/4 TSP Salt
  • Melting Chocolate (Can Also Use Chocolate Chips)

Directions

Start by melting butter in a large bowl. This works great in the microwave. SIFT in all of the powdered sugar.

Next, add the peanut butter, vanilla and salt. Mix with hand mixer until the consistency is that of cookie dough.

Roll the mixture into 3/4 inch balls and place on parchment paper then put in refrigerator for about an hour to chill.

Once removed from the fridge, dip the balls in melted chocolate and place back on the parchment paper then back into the fridge to chill again. There are lots of ways to dip into the chocolate but I find that using a pick placed into the middle the be the easiest. You can also place on a fork and dip in then roll onto the parchment paper.

Variation Using Cookie Cutters

This same recipe (ingredients anyway) can be used with cookie cutter to make shaped treats for holidays and celebrations. Check this out with these fun shamrock shaped treats.

Instructions

  1. Mix all ingredients except chocolate.
  2. Roll into 3/4 inch balls and place on parchment paper.
  3. Chill for 30 minutes.
  4. Melt Chocolate in glass dish.
  5. Dip balls in chocolate.
  6. Chill for an additional 30 minutes.
