Cake Box Grinch Cookies

Whip up a batch of Cake Box Grinch Cookies in a matter of minutes.

This is about as simple as it could possibly get for a cookie recipe. Tear open a box of cake mix, drop in two eggs and a tad bit of oil, and BAM! Amazing cookies!

Ingredients for Grinch Cookies

  • 1 (15.25 ounce) Package White Cake Mix
  • ½ Cup Vegetable Oil
  • 2 Large Eggs
  • Powdered Sugar for Rolling
  • Red Candies
  • Icing (Optional)

Parchment Paper – This is the BEST way to line baking pans and dishes. It is great for pouring melted candy too.

Directions for Cake Box Cookies

This is the same set of directions for making any cake box cookies with just three ingredients – but to turn them into the Grinch themed, you need the added food coloring and candies.

START by Preheating the oven to 350°F. Line a baking sheet with parchment paper and set it to the side.

Mix the ingredients together. In a large mixing bowl, mix the cake mix, eggs, oil and a squirt of green food coloring together until smooth. You can also mix in the bowl of your stand mixer on LOW.

Add more green food coloring if you want your mix to be darker.

Using a cookie scoop, portion the dough then roll each small ball into powdered sugar.

Place onto the prepared cookie sheet, spacing the cookies 2 inches apart.

Bake cookies for 9-11 minutes, until they are lightly golden at the edges. Allow the cookies to cool on the baking sheet.

Once the cookies are cool, add a red heart candy to the center of each. If your heart candies are large (like gumdrop hearts), they can be pushed into the centers. If they are small, it is helpful to use a little icing to hold them in place.

How to Store Cake Box Cookies

Cake mix cookies can be stored at room temperature in an airtight container for 2-3 days. You can freeze these cookies in an airtight container or a tightly-sealed bag for several months. Let them COOL completely before freezing.

Notes

Cookies can be stored in airtight container for up to a week. For longer storage, keep in the refrigerator.
