This recipe is awesome for baked potato lovers who don’t want the hassle of peeling off tinfoil.  It is also grand for taking to pot-lucks or for meals that need to be prepared ahead of time.  It is easy and yummy.  Cheesy Carbonara Potato Casserole can be adapted to suit the topping choices of your potato eating crew.  Here is how we like it, with our favorite Carbonara Sauce from World Market.

The key is in the pre-cooking of the potatoes BEFORE they go into the casserole to be baked.  The larger the chunks are that you put in the pot to boil, the longer they need to cook.  I try to get all of my pieces to be approximately 3/4 inch cubes.  We all like the skin, so I leave it on.  You can peel the potatoes first if skin is not your family’s thing.

Sauce

It smells unbelievable before it ever even goes into the oven!  It looks delicious already too.

If I am not serving this as a main dish, my favorite was to use it as a side dish is with steaks cooked on the grill.  I love to get my part done ahead of time (this and a salad) and be able to relax and enjoy evening while someone else does the grilling.  I would love to hear your thoughts on this recipe and what you like it with.  Please share in the comments!

  1. This looks so delicious. I love that you used carbanara sauce instead of traditional sour cream. A lot more flavor I’m sure, and my husband would LOVE them!!
