Fresh Strawberry Chocolate Poke Cake Recipe

If you haven’t ever made a poke cake, you are missing out on something amazing. This recipe is a great way to use those fresh berries in making a delicious (gluten free here) dessert.

This gluten free recipe is made with fresh strawberries but could us any kind of berries at all. After a trip to pick buckets and buckets of strawberries though, it is strawberry time for us. It is delicious with a vanilla cake mix too! Try it all the different ways.

Ingredients

  • Chocolate Cake Baked in a Well Greased Rectangle Pan
  • Vanilla Pudding Mix
  • 1 Cup Heavy Whipping Cream
  • 2 CUPS Fresh Cut Strawberries

You Will also need a blender!

Directions

The first step is to have a fresh baked chocolate cake HOT from the oven. Once you have that ready to go (in a rectangle baking pan), get started on these few simple steps to turn it into a Fresh Strawberry Poke Cake.

Step One

Poke holes all over the HOT cake. This is a lot of fun BUT beware – the insides of hot cake is HOT!

Step Two

Mix the pudding mix, heavy cream and strawberries in blender until creamy – about a minute to ninety seconds should do the trick.

Step Three

Pour the mixture over the cake and spread evenly. It will sink into the holes and make the insides of the cake super moist. This is a great job for a kid baking helper!

Step Four

Refrigerator for a couple of hours until the top sets. If you plan to leave the cake for more than 3 hours, cover with plastic wrap.

Step Five

Serve with fresh strawberries on top. These can be cut into small pieces are added whole for that WOW factor. Whipped cream is a fun addition too. If you really want to go ALL out, add a little chocolate syrup.

  • Instant Vanilla Pudding Mix 3.4 OZ
  • 1 Cup Heavy Whipping Cream
  • 2 CUPS Fresh Cut Strawberries

Instructions

    Poke holes all over the HOT cake. This is a lot of fun BUT beware - the insides of hot cake is HOT!

    Mix the pudding mix, cream and strawberries in a blender until creamy.

    Pour over the cake. The mixture will sink into the holes. Spread evenly.

    Refrigerator for several hours before serving.

    Top with whipped cream and strawberries.
